New Mexico Eatery Expands to Austin

New Mexico restaurateur and chef Erin Wade is bringing her bistro, Vinaigrette, to Austin.

The restaurant, scheduled to open in September, will be off South Congress in the facility formerly occupied by Tree House Italian Grill, north of Oltorf. There are two other Vinaigrettes, one in Albuquerque and Santa Fe.

Vinaigrette specializes in salads made from locally produced food.

The New Mexico locations get as much as 70 percent of their ingredients from Wade’s 10-acre farm in Nambe, New Mexico. Wade said she intends to buy a farm near Austin to grow organic produce for local consumption.

Wade said in a telephone interview that the Austin location would hire as many as 50 employees.

The 3,500-square-foot Austin location will include on-site parking, a large patio and a kitchen, she said.

“We were looking at properties in South Austin that had a strong residential and commercial community and great parking,” Wade said.
