New Mexico restaurateur and chef Erin Wade is bringing her bistro, Vinaigrette, to Austin, the Austin Business Journal reported.

According to that publication, the restaurant is scheduled to open in September. There are now two Vinaigrettes, which specialize in salads made from locally produced food, one each in Albuquerque and Santa Fe.

“The New Mexico locations get as much as 70 percent of their ingredients from Wade’s 10-acre farm in Nambe, New Mexico. Wade said she intends to buy a farm near Austin to grow organic produce for local consumption,” said the report.
