Sometimes our organization gets lucky and host not one but two happy hours a month. March was a lucky month for us! Our first happy hour this month was hosted by Erin Wade and her team at Vinaigrette. Erin Wade, pictured above, is the owner of a new and welcomed salad bar in Austin, Vinaigrette. She started Vinaigrette in New Mexico and ventured to Austin, Texas as her first out-of-state location.
Our members were all smiles as we sampled the bar snacks which included kale nachos, shoestring sweet potato fries, kale fritters, and duck “tacos” (done with jicama tortillas). My favorite was the duck tacos. After we snacked on the appetizers, Erin sent out giant salads for us to share. The Nutty Pear-Fessor was a crowd-pleaser. Not surprising as the ingredients were balsamic roasted pears, bacon bits, and tender steak. We also tried the Asian Chopped Salad, La Pepita, and The Omega.
